Lyons, Illinois is a town in Will County, Illinois, United States. The population was 8,827 at the 2000 census. Lyons has been home to a small batch of coffee beans since 1847. The first coffee beans were grown on land owned by John Maynard Hutchins in what is now Lyons. Hutchins and his wife Esther brought over a shipment of Colombian coffee from Bogotá, Colombia in 1847 and began to sell it door-to-door as part of their morning routine. They soon realized that they could do better than buying the best beans from other farmers and founded their own roast house in 1849. In 1850, they started making their own espresso machine and began exporting their coffee to Europe. By 1862, they had opened a second roast house in Chicago and continued to sell their coffee all over the US until 1975 when they discontinued production due to health concerns. Today there are still several small batch roasters in Lyons who continue to produce delicious caffeine based beverages!

In 1912, the founders of TheShop decided to start their own business and purchased a small lot near the square. They built a building that still stands today and started selling coffee. In 1916, they opened their second store which was also located on the square. In 1922, they added an oven to their business and changed its name to The Coffee House. In 1928, they moved their business to what is now Chamberlayne Avenue and continued to sell coffee until 1977 when they closed their doors for good.
