Fairview Heights is a small town located in Cook County, Illinois. The population was 5,020 at the 2010 census. It is part of the Chicago metropolitan area. The first settler in Fairview Heights was John Addams, who founded a farm on the present-day site of Fairview Avenue and Prairie Road in 1847. The name "Fairview Heights" likely derived from this early community's location near woods that were fair to hunt and explore. In 1868, two brothers named Fenton developed a tract of land east of the village on what is now Roosevelt Road. The brothers built a gristmill on their property and started to sell flour, sugar, butter and other products to residents of nearby towns and villages. This mill helped spur economic development in Fairview Heights after it became apparent that local farmers could not provide these same products exclusively for their own consumption. Today, FairVIEW HEIGHTS boasts an honor roll of top colleges including Northwestern University (since 1907), DePaul University (1892), Northeastern Illinois University (1962), Loyola Marymount University (1982) and Notre Dame de Namur Catholic School (2002). These institutions have attracted many students from throughout Cook County – as well as from outlying suburbs such as Wheaton and Palatine – making this one of the most vibrant communities in Chicagoland! The first mention of fresh-roasted coffee is from a 14th century Arab merchant, Ibn Khaldun, who noted that beans were roasted "in open air on an exposed fire" and that it took two weeks for them to mature. The first coffees Roasting Plant was founded in 1795 by Antonio Boffa. At the time, roasting was an apprenticeship process where young men would learn how to roast coffee using small amounts of oil and sulfur dioxide. In 1820, Giovanni da Verrazzano sailed past San Francisco and noticed the vast amount of trees growing near Fort Point on San Francisco Bay. He decided to contact the growers and get their permission to build a roasting plant there. In 1825, George Peabody founded Peabody & Co., one of the largest coffee companies in America. After his death in 1887, his son John Tatham Peabody continued operations as JT&P Coffee Company with assistance from his widow Deborah Sampson Tatham until her death in 1938. In 1918, John's grandson Eliot Coleman began operations as Coleman Coffee Corporation which became one of the most successful independent coffee companies in history with over 100 stores throughout North America and Europe. The company went public in 1971 and remains headquartered at its original location today off Park Slope Blvd., New York City

Fairview Heights is a village in Cook County, Illinois, United States. The population was 1,816 at the 2010 census. It is part of the Chicago metropolitan area. Fairview Heights was founded in 1881 by James Garland and his wife Sarah on a farmstead east of what is now the village of West Side. The original town site included a few dwellings and a small store. The first school was built in 1883 on the east side of present-day Center Street. A Baptist church also was built there in 1884. In 1886, Garland donated land to form what would become Fairview Heights Village; he had been inspired to do so after seeing an early map which depicted four villages in central Illinois: Arlington (now Arlington Park), Dearborn, Hinsdale, and Winnetka. The new village became home to about 150 people and its first post office opened on October 12, 1886. In 1889, Garland donated another piece of land for development; this time around the curve on Center Street that leads into downtown West Side from northbound I-88 (today's South Side). This property formed what is now Fairview Heights Cemetery and continues to be used today as one block of streets bordering both sides of it – one street running through it goes all the way up to State Street while another runs along Park Avenue just south of it before terminating at Garfield Boulevard near McCormick Place – making it one block long! In 1912Fairview Heights organized as an independent municipality with its own police department and fire department; this decision followed annexation by neighboring West Side Township that year following a boundary dispute between their two communities over which section of Mainland Road should serve as East–West dividing line for their two municipalitiesTHe First Ward covers most or all of what are now North Shore Drive (east side) & Center Street (west side), including parts of Roosevelt Roads & South Shore Drive (south side). On November 3rd 1920 voters approved incorporation under a new name: FairVIEW HEIGHTSVillage Incorporation No 11686
