In fact, one of the earliest systematic roasting efforts took place at The Hermitage Coffee House on Meeting Street in 1821. At first, most of these coffeehouses only served light refreshments such as tea and chocolate cake; however, over time they began to offer more serious beverages. In 1827, The Hermitage became the first known coffeehouse in Illinois to serve a full morning cup of joe. The popularity of caffeine-rich dark earth beans soon spread throughout America and into Europe. By 1830, nearly every large town had its own coffeehouse (or "café"), which provided an important source of social interaction for residents. Additionally, many wealthy Americans spent their mornings drinking from these establishments before starting their day job(s). This type of atmosphere is often referred to as "the old world" because it was common for people to meet each other face-to-face instead of throughmediated conversations on paper or digital devices. In 1837, The Hermitage Coffee House moved from Meeting Street to what is now Fourth Street in downtown Charleston due to concerns about fire hazard caused by candles being used at night. However, this move did not stop the popularity of coffee house visits - many new Yorkers included visitations during business hours into their daily routine!
