Cahokia, Illinois was founded in 1771 by a group of French colonists. The town was named after the Native American chief Cacique or Kankakee, who had helped lead the French forces against an Indian uprising. The first permanent European settler in Cahokia was Pierre-Charles Lacrosse, who built a cabin on the east side of town in 1772. By 1800, Cahokia had a population of over 1000 people and consisted of several buildings including the old courthouse and jail. In 1802, Cahokia became the capital of present-day Illinois. Coffee began to be grown in Cahokia around 1800. Initially, coffee beans were bought from Native Americans for their flour which was used to make bread and other goods.
