Belleville, Illinois is one of the oldest cities in the United States. The city was founded on the east side of the Mississippi River by French fur traders in 1792. It became an American port and manufacturing center during the mid-19th century. Belleville's most famous resident, Ulysses S. Grant, served as President of the United States twice and was honored with a statue in Belleville. The city's coffee history begins with a small grocery business run by Solomon Gibson in 1859. From this business, Gourmet Coffee began selling coffee to customers throughout Illinois and beyond. In 1916, Gourmet Coffee merged with another small coffee company, National Roasting Company (NRC). This merger allowed Gourmet Coffee to sell its coffee direct to consumers across America. During World War II, Gourmet Coffee produced coffees for many different military branches including the Navy and Air Force. After the war ended, Gourmet Coffee continued producing quality coffee until it closed its doors in 1990. Today, Belleville's gourmet coffee scene continues to thrive thanks to local roasters who continue to produce high-quality beans at their businesses.

Belleville's first gourmet coffee shop opened in 1993. It was located at the corner of Ebenezer and State Streets. The store was called "The Roastery". In 2001, the shop moved to its current location on Douglas Avenue.
Belleville is a small town in DuPage County, Illinois, United States. The population was 3,731 at the 2010 census. Belleville is part of the Chicago metropolitan area. The first European settlers in what is now Belleville arrived in 1818 when George Weldon and his brother John founded a farm on the site of what is now Grant Park. The Weldon brothers were followed by several other pioneers over the next few years and by 1825, all but one of the original families had left for unknown reasons. In 1830, John Prentice purchased land east of present-day Belleville from David Wilkinson and began to build a house which he named "The White House". He also laid out a road that ran through his property to connect it with other surrounding farms. The village of Belleville was born. Belleville grew slowly until the mid-19th century when an influx of workers – mainly farmers – started to arrive in search of jobs in newly developed agriculture towns like Chicago. This new community quickly became known as "the Village" because most residents were either farmers or related to them. By 1860, Belleville had around 100 residents and was thriving as an agricultural center with its own store, post office, school and churches (including one founded by Methodist minister Rev. Cranch). However, during the American Civil War (1861-1865), many farming families chose instead to fight for Confederate plantations rather than face taxes and shortages caused by warring states. In 1865, after Lincoln's assassination, many Unionists moved into Belleville due to its neutrality - though some did manage to keep their farms while others abandoned their homes entirely. A few businesses stayed open however; these included Mr & Mrs Bliss' general store which operated until 1886; J H Mott's bakery which opened in 1872; R W Mellon's grocery store which lasted until 1934; Harry Ebeling's Barber shop which operated until 1951; and Gussie Moran’s restaurant which operated from 1915 until 1958 before being bought by Hostess Brands Incorporated in 1959. However most businesses closed or moved away during this time period because there wasn't enough demand for goods produced within town limits due to advancing transportation methods such as railroads and automobiles made available through nearby cities like Chicago and St Louis Missouri . Today only two houses remain standing from those built during the early 1800s: One used as a museum annexe inside Grant Park (now occupied by Museum Of Science And Industry) while another listed on the National Register of Historic Places has been demolished since it ceased operating as a home rule municipality under state jurisdiction c1997 following incorporation into Cook County .

Coffee started being exported again after World War II because new roasters had developed better ways to roast beans at lower temperatures and levels of bitterness so they could compete on a global scale against European brands like Starbucks and Dunkin' Donuts. Today there are over 1,500 gourmet coffee shops across 92 countries around the world that offer customers amazing flavors from all around the globe – something you can't find at any convenience store or grocery store!
