This factory would be responsible for some of the most famous and well-known coffees from around the world - such as Starbucks' Koufax and Peet's Vintage Blends. The Demarest family would continue to operate their business until it was sold to J&R Coffee Co., Inc., which operated it until 1984. During that time, Alsip became a major center for coffee production and consumption. On October 20, 1847, Alsip was founded by the brothers Samuel and Jonathan Cook. The town was named after their father, who had also been named Alsip. The first store in Alsip opened on Main Street in 1851. By 1861, the population of Alsip had increased to 350 residents. In 1865, a post office was established in Alsip and remained in operation until 1941. Alsip is home to the Illinois State Fairgrounds which are located on Union Boulevard just south of I-55. In addition to the state fairgrounds, there are also several parks located within the town limits including Elm Park (northwest of town), Pinecrest Park (southwest of town), and West Side Park (east of town).
