The Paiute were a Native American tribe who lived near the Snake River Valley from about 3,000 BC to 1800 AD. They traded with tribes farther upriver and made contact with European explorers during this time. One of these Europeans was Alexander Mackenzie, who explored the area in 1811-1812. He named it after his friend and patron, Prince George Vancouver (1779-1845). In 1876, Jens Jensen began roasting coffee beans at his business Jensen's Coffee House on Main Street in Garden City. His business thrived until 1906 when an earthquake destroyed much of downtown Garden City. Jensen's Coffee House reopened soon after but ceased operations due to World War I rationing of caffeine products. In 1925, Jens' son Bjarne opened Hansen's Coffee Shop on Second Avenue in what is now known as Hansen Plaza. Hansen's operated until 1978 when it was closed by ownership change which led to its destruction over time withinanniased graffiti throughout its interior walls from various members of the previous owner's family including their father Bjørn Hansen (1914-2002) who also used to own Hanes stores across North America.) Bjarne Hansen purchased the store from his father’s brother Ole Olsen (1915-2001) in 1978 which led to Hansen’s Fresh Roasted Coffee becoming one of only two remaining independentlyowned Fresh Roasted Coffee businesses left in North America outside of Europe or Japan! In 2000 Bjarne retired from running his business having owned it for over 40 years! In 1912, Harry Heublein founded the Heublein Coffee Company in Garden City with a small kitchen and two workers. The company operated until 1958. In that time, Harry Heublein's son John Heublein ran the business. John Heublein was succeeded by his grandson, Ronny Heublein, who continued the family business until it closed in 2002. Ronny Heublein started fresh roasted coffee at his father's shop in 2000. At that time, Ronny he opened up his own roast shop on Main Street called Ronny's Roastery & Events which continues to serve delicious hand-picked coffee from all around the world today!

The area that would become Garden City was first settled by farmers in the late 1800s. In 1909, Garden City became an incorporated town when the towns of Cache and Nampa merged. The name "Garden City" was chosen because it had a garden-like setting on its main street. In 1951, Garden City annexed the neighboring town of Carbon to its growth. Carbon's population dwindled after World War II due to lack of jobs and an exodus of residents in favor of larger settlements in nearby cities such as Boise and Moscow. In 1984, Garden City voted to move from its original ZIP code (87362) to 82007 for economic reasons; this decision has been criticized as being motivated more by politics than factual evidence. The city's growth led to increased traffic and congestion which negatively impacted the quality of life for residents. In response to these issues, Garden City voters passed a referendum in 1969 asking for annexation into Boise County. As part of this agreement, Garden City received approximately $30 million in tax dollars over 20 years to help improve infrastructure and improve the quality of life for its citizens. Today, Garden City is one of Boise County's most vibrant communities with a rich history that has been influential in shaping the region both historically and today.
The Garden City area was the site of a small town in central Idaho from 1875 to 1912. The post office was first established at Garden City on February 24, 1875. The original settlers were J.B. Hutton, Wm. Fenton, and Charles Moffett. Garden City was named for the garden city in London where General James Kappe lived with his family during the early 1800s. Kappe's father had been a trader in Russia and he learned Russian while living there before coming to America in 1827 as part of the American party that settled at Seattle, Washington Territory. He married Anna Maria Sibley and they returned to Russia where he died in 1853 after many years of exploration and trade interests there. His son James Kappe Jr., who also became an explorer and rancher, took over operations of the family business when his father died in 1886-1887. In 1912, Garden City merged with neighboring Pocatello to form the new city of Pocatello which remained separate until it joined the larger city proper on January 1, 1975
