The town was founded by two brothers, Captain John and Captain James Hines. The brothers wanted to set up a business in the area so they bought a farm near present-day Hinesville. The first coffee beans were ground and brewed atCaptain James Hines' farmhouse. Coffee was also ground and sold at local stores in the town. By 1825, captain James Hine's store had closed down but his brother John continued to sell coffee until his death in 1852. After captain James Hine's death, his brother's widow started the family business which prospered for many years. In 1865, Captains John and James' son Samuel purchased the property where the current Coffee Bean & Tea Leaf restaurant is located from their father’s estate. Samuel ran the business from that point on until it was sold to an outside company in 1978. At that time, Majestic Roasters (now Starbucks) took over management of the restaurant and began using Java beans from Captains John and James' plantation as their source for their espresso drinks

One of its most famous residents was basketball Hall of Famer Rick Majerus. After Majerus' death in 1984, Hinesville also became home to a professional version of American football team called the Falcons.
