Since the early 1800s, Pensacola, Florida has been a center for coffee production. The first coffeehouses in Pensacola were opened in the late 1820s and early 1830s. Coffee was grown and roasted hereabouts until the mid-19th century, when it began to be shipped south to markets in New Orleans and Boston. Coffee production recommenced in Pensacola about 1890 after a lull due to Prohibition. By the early 1920s, coffee beans had again become an important part of local economy and culture. In that decade, businessman John Cavanaugh purchased what is now known as Cavanaugh's Coffee House on First Street. At this location, he started making and selling roastable coffee beans direct to consumers through a catalog service which he called "The Raven." After years of growth at this business, John Cavanaugh sold his interest in the business in 1935 to Harry Sperling who operated it under the name Harry's Coffee House until World War II. In addition to its importance as a commercial center for coffee production throughout history, Pensacola also played an important role during World War II as a military town with significant involvement in supplying war materiel and personnel with caffeine (particularly from Java). By the 1940s, the company had become well known throughout Florida for its high-quality coffee products. In 1948, they began producing their own roast beans and began selling them direct to consumers. The company continued to grow and expand throughout the years, eventually purchasing a large parcel of land in Pensacola Bayou Preserve in 1978 and opening their own roastery there that same year.
