The city's rich history with coffee goes back to when it was founded by Dutch colonists in 1792 as a trading post on the Columbia River. Coffee continued to be an important part of the city's economy until after World War II when production dwindled due to competition from other commodities. However, during the 1970s and 1980s, coffee regained its popularity in Vancouver as a result of its unique flavor and reputation. Today, there are several small-scale roasting businesses located throughout Vancouver that produce artisanal coffee. These businesses typically roast their own beans and use only local water and milk products. Some of these businesses have been around for years while others are relatively new arrivals in the market. nonetheless they all share one goal: to provide customers with delicious cup of java that is made from hand-selected beans from around the world. The origins of artisan coffee go back more than two centuries ago when European colonists first arrived in what is now Vancouver. They were familiar with roasted coffee beans from South America and were interested in importing this type of product back home. In 1807, Danish immigrants settled in what is now downtown Vancouver; they soon started roasting their own coffeebeans for sale at their stores. Over time, more people came throughland seeking opportunities to purchase these beans - including some who became famous entrepreneurs such as George Hearnshaw (founder of Harbourfront Centre). It wasn't long before word got out about this high-quality bean crop and groups of enthusiasts began traveling upriver to experience everything that beautiful city had to offer! In 1922, entrepreneur Harry Seagram bought land adjacent to False Creek where he built his flagship restaurant – Starbuck’s - later known as Shangri La Hotel (& Cafe). This landmark building still stands today as one of Vancouver’s most popular tourist destinations thanks to its amazing views over Stanley Park & False Creek! He also introduced espresso machines into our region which quickly revolutionized how people consumed their morning caffeine fix! Thanks Harry!

Vancouver has seen growth over time: its population increased rapidly during World War II due to wartime military production; then grew slowly through the post-war years until reaching its current level around 2000%. Growth resumed following the recession in 2007–2008 and has continued since then: according to preliminary 2013 census data, Vancouver's population is estimated at 12,695 people

Over time, different methods started being used for roasting coffee beans. One method was to roast them on a large scale in ovens or sun dried roasted trees. Another method was to roast them in small batches over low heat until they became light and fragrant. The final way that coffee was prepared before it reached our tables involved ground beans being mixed with hot water and poured into a pot or mug. This method was known as rinsing or wetting the beans before brewing so that the flavor would be better able to penetrate the cup
