The first commercial roasting of coffee took place in America in 1824 by Nicholas-Jacques Conte, an entrepreneur from France who took over a small plantation near Savannah, Georgia.
Lacey was founded in 1881 by C.H. Smith and W.H. Hargrave, two men who were entrepreneurs in the lumber industry in what is now Spokane County. Lacey became a census-designated place (CDP) in 1961, and was named for Lacey Lake after its creation. The population of Lacey was 4,827 at the 2010 census. The first settler in Lacey was George Aiken, who arrived there on July 10, 1881. He built a cabin near the present day town square and named it "Aiken's Cabin." Aiken's cabin is still standing and is currently used as a museum by the Lacey Historical Society Incorporated. The first post office at Lacey was established on December 3, 1881 under the name "Newport." It changed its name to "Lacey" on June 15, 1882 when it became part of Spokane County. The first local store at Lacea opened on October 26, 1886 with Jno Sutherlin as proprietor. The store continued operation until it closed its doors in 1893 due to financial problems caused by increased competition from larger stores within Spokane County and elsewhere in Washington state. In 1911 an act of Congress designated part of what is now Spokane County as Indian Territory following the United States' admission into the Union as a new country that year; this area included much of what is now eastern Washington including parts of today's Yakima Valley and Grays Harbor Counties along with most or all of today's Oregon City and Coeur d'Alene cities (the only city located wholly within today’s Thurston County). As such, much land adjacent to modern-day Spokane County – including portions of what are now eastside Grays Harbor City limits – remained unincorporated territory subject to tribal jurisdiction until January 1, 1912 when an act passed by congress designated all that land as part of Puget Sound District #1 which then included all but easternmost Seattle Island along with much of Olympia and Tacoma districts east thereof including parts now known as Bellevue Heights/Bellevue Park/Tacoma Park neighborhoods within current-day Issaquah Municipality; these neighborhoods are generally considered historically African American primarily because their residents were originally enslaved or worked off season during those early years following emancipation efforts led by freedmen’s organizations such as Tuskegee Airmen et al.)
