Covington, Washington was founded in 1851 by Captain George Covington. The town is named after him and his wife, who donated the land for the settlement. Over time, Covington became a major center for coffee production in the Northwest and its coffee industry has continued to grow throughout the years. The first cup of coffee from Covington was brewed on December 10, 1851 by Captain George Covington and his assistant Mr. Hayes. The coffee beans were roasted on an old slave oven located in downtown Covington. Coffee production began at a much smaller scale but it quickly grew into a major industry in the area. By 1860, coffee beans were being exported to numerous countries across the globe. In 1916, Harry Stoker established Stoker Coffee Company which would continue to produce high quality coffee until it closed its doors in 1976. In total, over 100 companies have operated in the Covington region since 1850 including several that remain active today such as Starbucks, Peet's Coffee and Cascade Coffee Roasters. The legacy ofCaptain George Covington continues on through his donation of land to become one of America's most vibrant cities with rich history!

Covington is a census-designated place in Spokane County, Washington, United States. The population was 2,913 at the 2010 census. It is part of the Spokane Metropolitan Area. The town was founded in 1885 by George Covington and named after his home county of Covington, Kentucky. The first post office was established in 1886 and the name changed to Covington in 1907. It became an incorporated town on November 1, 1912. The population increased rapidly from its initial population of only fifty people to over one thousand by 1920. In 1980 the town annexed the adjacent borough of Forest Park which had a previous presence as an agricultural community with a few buildings dating back to 1887. In 2000, much controversy surrounded plans for a new shopping center scheduled to open near Interstate 90 in neighboring Spokane Valley called "CenturyLink". Many residents opposed what they saw as an unsightly development that would have resulted in high traffic levels and decreased access to quality local shops and services. As planning proceeded it emerged that CenturyLink would be built on land that once belonged to Covington Center mall which had been closed since 1998 due to lack of business activity around it.. A referendum was held on November 3rd 2002 ballots asking residents if they wanted CentenaryLink or budget cuts proposed by Mayor Dianne Watts (D). A majority (57%) voted against building CentenaryLink while 33% voted yes with no clear winner emerge

Consequently, during this time period tea became more popular across much of the world while coffee languished in obscurity. The history of Covington began with a small group of farmers who set up shop in what is now the downtown area. In 1882, J.B. Forrest purchased a tract of land east of the falls which he named for his father-in-law, Colleton Covington. Over time, the name changed to its current form - Covington - due to its location on County Road 575 (now US 101). Covington experienced significant growth during the early years of its existence as a community. By 1907, it had reached a population of around 40 people and boasted several businesses including a grocery store and post office. During World War I, however, the town saw significant destruction as it was located near military camps and munitions factories. This led to some modest growth during peacetime but ultimately resulted in little change until after World War II when industry gradually replaced agriculture as the mainstay of local economy. During this time period, Covington also gained notoriety for its annual Harvestfest celebration which features arts and crafts exhibits along with food stalls from throughout area businesses. One popular tradition that continues to this day is caroling on Halloween night by streetlights at various locations within the downtown district

Hennessey and operated for two years. In 1857, the first school in Covington was opened by Mrs. Hennessey with twelve students. The town grew rapidly around this time with new business establishments being erected throughout the village including a hotel, bakery, grocery store and blacksmith shop. By 1860, there were over fifty residents in Covington and it had attained its present size with a population of 150 people when it incorporated as a city on February 15, 1868. During the late 1800s and early 1900s, Covington experienced significant economic growth due to its strategic location at the junction of several important transportation routes including Interstate 90 and US-2 which facilitated commerce between Spokane Valley and Seattle metropolitan areas. However, during World War I (1914-18), along with many other towns in Eastern Washington, Covington was severely damaged by Allied bombing raids that caused extensive damage to buildings and crops. Consequently, during World War II (1939-45), much effort was made to rebuild bothCovington's infrastructure as well as its economy which has led to its current prosperity since then; however, some aspects of those past successes have yet to be fully appreciated or appreciated considering the high levels of poverty currently prevalent within the city limits
