George had been born in 1792 in Northampton County, Pennsylvania, and Anna Maria had come to America with her parents in 1825. Rolling Meadows was named after two rolling hills near its location on the east side of the Chicago River. The Smiths operated a grocery store and feed store before moving to their present-day home on Eldridge Road in 1876. They raised chickens and pigs until 1925 when they stopped meat production and closed their doors entirely; however, their home still remains as one of Rollings Meadows' most popular tourist attractions today.
