Lippincott in 1916 and then to Roquefort America Corporation in 1957. In 1978, Roquefort America Corporation merged with Sibley & Sons Incorporated, which made Kissimmee their primary production center for roasting coffee.

It is the county seat of Polk County and is part of the Orlando– Kissimmee–Mantua Metropolitan Statistical Area. The area now called Kissimmee was first settled by Creek Indians in the late 18th century. A post office called "Kissimmee" was established in 1838, and remained in operation until 1907. In 1893, a group of settlers named themselves the Citizens' Company and began to develop what would become Kissimmee into a town. They built churches and schools and started to sell land around town for development. By 1910, there were over 100 residents in what is now Kissimmee. In 1928, then-Governor of Florida Al Smith issued a proclamation designating Kissimmee as the capital of Polk County; this designation lasted until 1959 when Gainesville became the county seat again. The towns of Starke and Auburndale followed suit soon thereafter. In 1965, annexation by Orlando made Kissimmee an entirely new municipality within Orange County and it remains that way to this day. Until recently (2006), much of downtown KissIMMEE consisted of empty warehouses which had been converted into housing units during that time period due to easy availability of land near I-4 exits on US 1B northbound (Exit 407)and US 192 southbound (Exit 408). These conversions have since stopped or are being phased out as more homes are being built closer to I-4 exit 407 & US 192.
