The first documented mention of coffee in San Luis is from 1885 when a man by the name of John Wesley Smith purchased some land near present-day San Luis and began to grow coffee. Santiago Canales began growing coffee near present-day downtown in 1922 and continued to serve roasted beans from his farm until he passed away in 1966. It wasn’t until 1935 that Enrique Gomez established an Italian restaurant called La Villa which served roasted beans from his farm southwest of town on Apache Road. From 1938 to 1945, Angelo Perez ran Angel's Coffee Shop which offered ground Caribbeans as well as roasted beans from various sources including his own farm east of town on Front Street. In 1949, Harry Henschel opened The Gilded Cageocated just northwestof present daySanLuisandservedroastedbeansfromhisfarmnorthwestoftownonGarlandStreet). This became one of Tucson's most popular businesses until it closed in 1951 due to competition from Better Homes and Gardens chain stores and other large stores in the city center.

One of the most important events in San Luis's history is the incorporation of the town on November 7, 1881. This was a sign that San Luis was ready to take on its new role as an agricultural center. The town had been growing rapidly since it was founded in 1870 and by 1881, it had over 1,000 residents.
